It can be very difficult to ignore desserts and often I’m asked what’s a healthy alternative to satisfy your sweet tooth. One of my favorite recipes is the Chocolate-Avocado Pudding I included in my cookbook, Running in Heels, Quick and Smart Snacks and Entrees. Avocados are great! This high fiber, high protein fruit is packed with healthful nutrients, including potassium. In addition, this creamy treat not only curbs my sweet tooth, it helps fill me up.
Yields 2 Servings
1 Large chilled ripe avocado, mashed
2 tbsp. coconut milk
1/4 c. unsweetened cocoa powder(or your favorite chocolate protein powder)
1 tsp. vanilla extract
Sweeten with maple or agave syrup
Combine all ingredients in a food processor or blender. Serve Chilled. May garnish with shredded coconut, chopped nuts, cinnamon, coconut cream, chopped dates etc…..Enjoy!!
