Gluten-Free Breakfast: Chia Seed Pudding Recipe


May is Celiac Awareness Month. Celiac disease is an autoimmune disease which damages the small intestine, slowing the rate at which it absorbs and digests nutrients from food. Approximately 3 million people have this disease, while many more report a sensitivity to gluten. In observance, we’re sharing a delicious gluten-free recipe that anyone can enjoy. Whether you have a gluten sensitivity or are looking for healthy food alternatives, this chia seed pudding recipe is a must-try. Chia seeds are free of gluten and a powerhouse of nutrients, with fiber, protein, and omega 3 fatty acids. You can prep this recipe before bed and wake up to a quick and healthy breakfast or save it for a mid-day snack.

Ingredients (yields 1 serving):
1/4 cup of chia seeds
1/2 cup of milk (or raw coconut milk, almond milk)
1 teaspoon of Stevia (to taste)
1/4 teaspoon of Vanilla Extract
Mix all ingredients in a medium bowl. Cover the bowl with a lid or with a plastic wrap and refrigerate overnight.

In the AM, stir the pudding to make sure there aren’t any clumps. Next, add your preferred toppings. We went with gluten-free granola and black raspberries. You can try strawberries, grapes, kiwis, oranges, the yummy possibilities are endless. Note: we love toppings and used minimal pudding, you can increase the measurements to make more pudding. Enjoy!
