A Note From Kate: What’s Cooking?


This refreshing recipe is not only delicious, but healthy! Since figs are freshest during the summer, I love incorporating them into meals as often as I can. I love this recipe because it can either be an amazing side dish for a backyard BBQ or a satisfying main course for a sit-down dinner.

Greek Fig Mozzarella Salad

Recipe via Healthy Mediterranean Cooking by Rena Salaman
150g/5 oz. Mozzarella Cheese
5-6 firm figs
6-8 mint leaves
salt and freshly ground black pepper

For the marinade:
2 tablespoons walnut oil
1 teaspoon sunflower oil
juice of 1 lemon
½ garlic clove, peeled and crushed

1. Slice the cheese very thinly. Beat the marinade ingredients lightly together in a bowl and season to taste. Coat the cheese slices in it, cover and chill for 2-4 hours.
2. Just before serving, take the cheese out of the refrigerator. Trim both ends of each fig and slice each one in about 3-4 round slices. Arrange the cheese and fig slices decoratively on a round platter.
3. Drizzle the marinade all over and scatter the mint on top.

    dang….and I just polished off some cheetos….HEY, they were baked cheetos. And I washed them down with Simple Apple apple juice, so that cancels it all out.

    This looks like the wrong photo for the recipe!  Figs, walnuts, blue or gorgonzola cheese on a plate of greens, where’s the mint & mozzarella, decoratively arranged on a round platter?

    This recipe looks delicious! Add the fresh mint for aid in digestion and the mozzarella for a low fat trade for the bleu or Gorgonzola cheese. Gotta thank Kate for making athletic wear to fit all size and shape women!!
