
This refreshing recipe is not only delicious, but healthy! Since figs are freshest during the summer, I love incorporating them into meals as often as I can. I love this recipe because it can either be an amazing side dish for a backyard BBQ or a satisfying main course for a sit-down dinner.
Greek Fig Mozzarella Salad
Recipe via Healthy Mediterranean Cooking by Rena Salaman
Ingredients:
150g/5 oz. Mozzarella Cheese
5-6 firm figs
6-8 mint leaves
salt and freshly ground black pepper
For the marinade:
2 tablespoons walnut oil
1 teaspoon sunflower oil
juice of 1 lemon
½ garlic clove, peeled and crushed
Directions:
1. Slice the cheese very thinly. Beat the marinade ingredients lightly together in a bowl and season to taste. Coat the cheese slices in it, cover and chill for 2-4 hours.
2. Just before serving, take the cheese out of the refrigerator. Trim both ends of each fig and slice each one in about 3-4 round slices. Arrange the cheese and fig slices decoratively on a round platter.
3. Drizzle the marinade all over and scatter the mint on top.
