Light and Summery Quinoa Salad Recipe
Ingredients:
2 cups quinoa (cooked according to package)
1.5 cups corn (fresh or if frozen, thawed)
1.5 cups black beans (cooked and drained)
1 cup green onion (diced)
1/3 cup cilantro (diced)
2 cups cherry tomatoes (chopped)
1 cup red bell pepper (chopped)
2 avocados (sliced and cubed)
Dressing:
1 cup olive oil
6 tbsp. red wine vinegar
1 tsp. lemon juice
1 clove garlic (minced and chopped)
fresh ground black pepper and salt to taste
Cook quinoa and allow to cool. Add the veggies to the quinoa and mix. Whisk together salad dressing and dress to your liking!
Baked Sweet Potato Fries
Cut clean sweet potatoes into ¼ inch thick slices, lightly drizzle with olive oil, and season to your
likening before placing in the oven at 450 degrees for about 20 minutes, turning once, halfway through.
