2 peaches, pitted and diced

1 pint baby heirloom tomatoes, diced

Fresh corn kernels from 1 ear of corn

¼ red onion, minced

1 garlic clove, minced

1 Tbsp balsamic vinegar

2 Tbsp olive oil

Sea salt & freshly ground black pepper, to taste

4 slices good multigrain or manna bread, toasted

Fresh basil, thinly sliced

Toasted walnuts, chopped for garnish

A Drizzle of local honey

Pinch crushed red pepper flakes (optional)

In a medium bowl, toss the peaches, tomatoes, corn, onion, and garlic together. Add the olive oil, balsamic, and salt & pepper. Allow to marinate for at least an hour.

To serve, place toasted bread on a cutting board or serving platter and spoon peach & tomato mixture over top. Top with walnuts, fresh basil, a drizzle of honey, and a pinch of red pepper flakes.
