Healthy Honey Recipe: Pan-Seared Apricots

We all love honey for its amazing taste, but did you also know how nutritious everyone’s favorite sweet treat really is? Honey is known for instantly boosting the performance and endurance of athletes, and its natural sugars play an important role in preventing fatigue during exercise. Additionally, the glucose found in honey is absorbed quickly and gives the body an immediate energy boost. The recipe below combines honey with protein-packed Greek yogurt for a tasty and healthy treat.

What you’ll need:
1/2 cup honey
2 1/2 tablespoons fresh lemon juice
12 apricots, halved and pitted
18 fresh raspberries
2 mint sprigs, for garnish

What to do:
In a large nonstick skillet, boil the honey with the lemon juice over high heat until reduced slightly for 1 minute. Arrange the apricots in the skillet, cut sides down. Cook over high heat until just tender, 2 minutes; turn and cook until softened, 1 minute longer. Using a slotted spoon, transfer the apricots to plates. Add the raspberries to the skillet and cook over high heat, turning once, until softened, 1 minutes. Spoon the apricots, raspberries and juices over a dollop of Greek yogurt. Garnish with the mint and serve.
