Game-Day Recipe: Healthy Zucchini Nachos


Nachos are a sporting event staple! Lighten up this game-day fave by swapping tortilla chips with zucchini, and processed queso dip with light, shredded cheese. Add fresh ingredients, plus protein, and viola, you have a healthy meal. Check out the easy recipe below, one bite and you’ll be telling everyone that zucchini is the new tortilla chip!

For 8 servings, you’ll need:

4 medium sized zucchinis, washed and sliced into rounds
2 cups of cheese
1/2 cup cilantro, chopped
3 green onions, chopped
3 roma tomatoes, diced
1 16 oz. can of black beans, drained and rinsed
2 avocados, diced
1/4 cup of olive oil
1 lime
salt and pepper, to taste

Place zucchini rounds on an oiled baking sheet, add salt and pepper, to taste, and bake at 350 degrees for 8 minutes. At the 8 minute mark, sprinkle about 1/2 cup of cheese and broil for 2 more minutes. After that, add to a platter, and top with the remaining ingredients. Enjoy immediately.
