Try this recipe for Sunday brunch or even a quick weekday meal! It can be made in advanced and stored in a sealed container in the refrigerator until ready to eat!
1 cup pancake mix
¾ cup lemon yogurt
½ cup xylitol or dry sweetener of choice
½ cup liquid egg whites
1 tsp vanilla extract
1 cup fresh blueberries
Preheat oven to 350 degrees
Coat an oven safe pan generously with nonstick spray or oil
Combine all ingredients except blueberries
Gently fold in blueberries
Pour batter into pan
Bake for 30-40 minutes or until toothpick comes out clean
Serve with a dollop of greek yogurt, more fresh berries and lemon zest. Enjoy!
